    Unlocking an iPhone means changing it so that you can use carriers other than the one originally intended.

  2. jail breaking means your able to add programs such as aim & google earth and things like that.

    Unlocking is to use any sim card and carrier in the world to use on your iPhone like O2, Telsta, China Mobile etc.

To get technical jailbreaking is un encrypting the iphone filesystem so that we can add applications (Nowdays we just use an unencrypted RamDisk booted off the iPhone/iPod Touch with with iDemocracy 3 or ZiPhone) and unlocking is actually unlocking the Nor files, BootLoaders etc. of the iPhone so it can use any SIM card you want in it.
