I just bought the new iPhone 11 which has been great . But now I would like to do some adjustments to it and the phone is still in under warranty for at least year. Does the phone operator have to explain why it voids my warranty in case I unlock my phone?

Such behavior is not justified. You could try to say to your current phone operator that you will approach another phone operator in case they still refuse and hope common sense wins.
I do not know that there is law somewhere that would force telephone operator to reconfigure goods sold. It could be assumed that the contract has fixed limitation period. Once the agreement is over, you should rely on this clause, which allows you to enforce the ban only for limited time.
